The evening starts off on a promising note, with Sugar and Richie greeting guests with warmth at the entrance while floor managers patrol the dining area, ensuring everything is in order. Sydney, entrusted with the vital task of expo duty, oversees the smooth flow of orders from the waiters to the kitchen, emphasizing both speed and precision.

However, as the evening progresses, the team starts to falter. The restaurant is packed to the brim with eager patrons, but the kitchen is struggling to keep up with the demand. Customers begin to grow impatient as they wait longer than expected for their food.

Sydney valiantly tries to keep the show running, with Carmy hovering behind her, offering assistance and trying to keep things organized. But cracks in the system are becoming increasingly apparent. Matters worsen when Josh mysteriously disappears, leaving his station unmanned. Carmy, without hesitation, steps into the breach, but this comes at a cost. The fish, neglected in the absence of Josh, grows cold and becomes unusable.

More food issues arise when Sydney rejects Tina's steak, necessitating further preparation. Marcus, who now takes over expo duty, is slow and disorganized, adding to the chaos. Gary is dispatched to fetch new forks, a task that Sugar, beleaguered by a clogged toilet, had earlier reminded Carmy about. Marcus's distraction leads to a disastrous shortage of bread, leaving diners hungry and frustrated.

And then, the night takes a surreal turn. Carmy, overwhelmed by the stress and confusion, inexplicably locks himself inside the walk-in refrigerator. The restaurant is now a scene of utter chaos, with guests growing increasingly impatient and the kitchen struggling to keep up. It's a far cry from the smooth opening that Carmy had envisioned, but perhaps, in the end, this is exactly what a dress rehearsal is for: to identify weaknesses and learn from them, in preparation for the real show.
