Episode 3 of Etoile kicks off with Jack stepping into a board meeting, his demeanor calm but alert. However, his composure shatters when an unexpected issue is raised: they propose renaming his beloved Fish Theatre, possibly in honor of Crispin Shamblee. Additionally, he learns of the possibility of a new board member joining their ranks. His anger flares up, and he vents his frustration to Geneviève, who is grappling with her own challenges. She discovers that the bull featured in the company's latest opera has stolen the spotlight from the actual dancers, earning more popularity than they deserve. Her colleague, Raphael, adds fuel to the fire by informing her of Tobias's latest antics – he's posted a call sheet for his ballet, summoning all 80 dancers to the studio.

In the studio, Tobias lines up the dancers, scrutinizing each one with a critical eye. To the dancers' shock and offense, he rejects most of them almost instantly. Geneviève steps in, explaining how Tobias has insulted everyone present. She offers to mediate the situation, but only if Tobias agrees to give Gabin a bit more attention. After some deliberation, Tobias selects Gabin and two other dancers for his ballet.

Meanwhile, in New York, Gael arrives at the studio, exactly as Cheyenne anticipated. Elsewhere, Mishi meets with the costume director and receives her new costume, discovering she's been cast as Gamzatti. When she returns home, she inquisitively asks her parents if they influenced Geneviève's decision to give her the role. They assure her that they had nothing to do with it and that she earned the position through her own merit.

Elsewhere, Jack is guiding a tour for his donors. When one of them chuckles at the name Fish Theatre, Jack's irritation surfaces. They venture inside the theatre and proceed to the rehearsal, where Jack's frustration spikes upon seeing Gael. He engages in a heated argument with Cheyenne, but neither is willing to budge an inch.

Their conversation is abruptly halted when Jack receives a call from a purported new board member, Joe Smith, whom he instantly recognizes as Crispin Shamblee. Without hesitation, he mocks Crispin before summarily ending the call. Meanwhile, in Paris, Mishi encounters difficulties during her rehearsal. Returning home, she stumbles upon a surprise welcome party her parents had inadvertently omitted mentioning.

Later, Geneviève ventures to her sister Leonor's abode, where she bonds with her two nieces and one nephew. However, an altercation arises between the sisters when Leonor disparages Geneviève's occupation as being unworthy. Geneviève, hurt and frustrated, storms out in a huff.

Elsewhere, Jack confronts Crispin in a restaurant, asserting his desire to retain his great-grandmother Dorothy Fish's name for the theatre. Crispin reveals a dark past, detailing how Jack's father had once mistreated him, and admits this is his vengeful master plan. After enduring a torrent of insults, Jack rises to his feet, declaring an end to their dealings.

At Mishi's welcome bash, Geneviève arrives just as her parents raise a toast to their daughter. The conversation shifts to the bull, causing the Minister of Culture to bristle at the media frenzy surrounding it. Geneviève excuses herself, prompting Mishi to chase after her, demanding answers about why she was cut from the company and then rehired to a life of misery. Geneviève, realizing her mistake, apologizes sincerely, and the two reconcile, their bond mended.

Jack subsequently encounters his mother and uncle, sharing the news of the theater's rename with them. They appear to accept the decision amicably, but his grandfather, a wheelchair-bound elder who rarely utters a word, surprisingly suggests they should take legal action. This places Jack in a precarious position, as he would essentially be suing himself in his role as the company's executive director.

In the midst of this dilemma, Harlan, a board member, informs Jack that Joe Smith is indeed a genuine member of the board and urges Jack to issue an apology promptly. Elsewhere, Geneviève visits Cheyenne's mother, inquiring if she could "take in a wayward soul." Meanwhile, Jack catches Cheyenne observing Susu and urges her to allow Susu to attend school. However, Jack firmly insists on the audition process. Susu's mother, catching sight of them, becomes distressed and hastily leaves with her daughter. Suspicious of Cheyenne's sudden fascination with children, Jack is coerced by her into joining her for a drink to discuss the matter.

Over drinks, Jack vents about the treacherous day he's had. Cheyenne then brings up Gael, and Jack asserts that they cannot depend on him due to his constant departures. Cheyenne assures him that she will keep Gael engaged and even secures his commitment through a contract. Reluctantly, Jack concedes.

Returning to his office, Jack pours himself another drink and immerses himself in ballet videos. He then instructs the cleaner, Fei, to ensure her daughter, Susu, attends class the following day, bringing Etoile Episode 3 to a close.
